Ingredients

  • honey mix (1 oz)
  • crushed ice (0.75 cup)
  • fresh lime juice (0.5 oz)
  • fresh pineapple chunks (0.25 cup)
  • fresh mint leaves (0.25 cup)
  • peach brandy (0.5 oz)
  • light Puerto Rican rum (1 oz)
  • mint sprig (1)

Instructions

  1. First make honey mix by stirring equal parts honey and hot water until dissolved; cool.
  2. In an electric blender combine crushed ice, fresh lime juice, fresh pineapple chunks, fresh mint leaves, honey mix, peach brandy, and light Puerto Rican rum.
  3. Blend at high speed for .
  4. Pour unstrained into a chilled wine glass or pearl diver glass.
  5. Garnish with a fresh mint sprig.
