Donn Beach's ancestor of the Mai-Kai's Hidden Pearl, guava, passion fruit, and a butter-honey cream.

Ingredients

  • honey cream mix (0.25 oz)
  • unsalted butter (1 oz)
  • honey (1 oz)
  • club soda (0.25 oz)
  • fresh lime juice (0.5 oz)
  • passion fruit juice (0.5 oz)
  • guava juice (1 oz)
  • light Puerto Rican rum (2 oz)
  • crushed ice (0.5 cup)
  • gardenia (1)

Instructions

  1. Prepare honey cream mix in advance: cream together unsalted butter with honey until smooth and uniform.
  2. In a blender combine club soda, fresh lime juice, passion fruit juice, guava juice, the prepared honey cream mix, light Puerto Rican rum, and crushed ice.
  3. Blend on high for 15–20 seconds.
  4. Pour into a chilled footed pilsner glass or coupe.
  5. Garnish with a gardenia or edible flower.
